Hot Water Method
The traditional way to make iced tea is to start with a hot, freshly brewed concentrate.
Measure enough tea leaves in a pot or saucepan to make at least a double-strength
brew. Pour on boiling water (water should be at less than full boil for green and white
teas) and steep about 5 minutes for black, herbal and oolong teas and 2-3
minutes for green and white teas. Strain the brewed tea into a pitcher containing
an equal amount of cold water. Stir and pour into glasses filled with ice
cubes.
Note: If the tea becomes cloudy when chilled, add a small amount of boiling water to the chilled tea and give it a stir.
Cold Water Method
The cold water method makes an especially smooth tea. Fill a large glass pitcher or other container with 2-3 tablespoons of loose tea leaves and 4 cups of cold water. Stir well and chill in the refrigerator overnight. Strain the mixture to remove the tea leaves. Keep refrigerated until serving time. Pour into glasses filled with ice.
Makes 1 quart of iced tea.
