Green Tea is the most widely produced and consumed type of tea in China and Japan. The finest green teas are picked during the early spring and then processed by hand. After picking, the leaves are pan fired or steamed to preserve their freshness. Rich in Vitamin C and low in caffeine, green teas have a lively, herbaceous flavor.
Chinese green teas are light-bodied, with flavors ranging from nutty to earthy to floral. Japanese green teas have a more distinctive vegetal flavor, with notes of freshly cut grass and a hint of the sea.
